test/mshot-shutdown-race: increase stuck timeout

At the end of the test, this has a tendency to hit as we're done
updating the number of bytes. Just bump it to 5 seconds which
should be more than plenty to not time out, while still allowing
a fairly early abort if the kernel is buggy.
